Ingredients

  • 1 1/2 lb. chicken breasts
  • 3 tbsp. Spanglish Asadero Elote Seasoning
  • 1 bunch cilantro
  • 1 jalapeno
  • 2 avocados
  • 1 cup lemon juice
  • 1 cup crema fresca
  • 1 cup red onion, diced
  • 1 cup chile morron, diced
  • 2 cups fire roasted corn
  • 3 cups mozzarella cheese, shredded
  • 1 bag tortilla chips

Directions
  1. Boil chicken for 12-17 minutes, or until cooked through and it reaches an internal temperature of 165° F degrees.
  2. Shred chicken and set aside.
  3. In a blender, combine cilantro, jalapeno, avocado, lemon juice, crema fresca, the Spanglish Asedero Elote Seasoning, and blend until smooth.
  4. Pour blended mixture into a skillet at medium heat, and bring to a boil.
  5. Add shredded chicken, red onion, chile morron, corn, and mix thoroughly.
  6. Top with cheese and cover the skillet. Cook until the cheese is melted, about 3-5 minutes. NOTE: You can also handle this step in the oven at 350 degrees for 3-5 minutes, until the cheese is melted.
  7. Serve immediately with chips for dipping.
