Chorizo con Nopales y Papas (Chorizo with Cactus and Potatoes)
Ingredients
- 1 ½ lb chorizo
- 2 medium potatoes, diced
- 2 nopales (cactus), previously cooked with a little water and salt
- 3 tomatoes
- 2 jalapeño peppers
- 1 small piece of onion
- 1 garlic clove
- 1 handful of fresh cilantro
- Salt and pepper to taste
- Spanglish Asadero or All Purpose seasoning
- Oil, as needed

Directions
Prepare the sauce
- Roast the tomatoes, jalapeños, onion, and garlic until charred.
- Blend them with a little water, salt to taste, and the cilantro. Blend only for 6 seconds so it becomes a chunky sauce. Set aside.
Cook the potatoes
- In a skillet, heat a little oil.
- Add the diced potatoes, season with salt, pepper, and Spanglish Asadero All Purpose seasoning.
- Cook over medium heat until tender. Set aside.
Cook the chorizo
- In another skillet, cook the chorizo over medium heat for about 15 minutes or until nicely browned.
Combine everything
- Add the cooked potatoes to the skillet with the chorizo.
- Add the cooked nopales and the roasted sauce.
- Mix everything well, cover, and let simmer a few minutes so the flavors blend together.
Serve
- Once the mixture begins to boil, turn off the heat and enjoy!
