Chorizo con Nopales y Papas (Chorizo with Cactus and Potatoes)

Ingredients

  • 1 ½ lb chorizo
  • 2 medium potatoes, diced
  • 2 nopales (cactus), previously cooked with a little water and salt
  • 3 tomatoes
  • 2 jalapeño peppers
  • 1 small piece of onion
  • 1 garlic clove
  • 1 handful of fresh cilantro
  • Salt and pepper to taste
  • Spanglish Asadero or All Purpose seasoning
  • Oil, as needed

Prepare the sauce

  1. Roast the tomatoes, jalapeños, onion, and garlic until charred.
  2. Blend them with a little water, salt to taste, and the cilantro. Blend only for 6 seconds so it becomes a chunky sauce. Set aside.

Cook the potatoes

  1. In a skillet, heat a little oil.
  2. Add the diced potatoes, season with salt, pepper, and Spanglish Asadero All Purpose seasoning.
  3. Cook over medium heat until tender. Set aside.

Cook the chorizo

  1. In another skillet, cook the chorizo over medium heat for about 15 minutes or until nicely browned.

Combine everything

  1. Add the cooked potatoes to the skillet with the chorizo.
  2. Add the cooked nopales and the roasted sauce.
  3. Mix everything well, cover, and let simmer a few minutes so the flavors blend together.

Serve

  1. Once the mixture begins to boil, turn off the heat and enjoy!
