Mexican Pico de Elote is a fun twist on the classic Pico de Gallo, with corn taking center stage. This vibrant dish includes fresh corn, tomatoes, onions, cilantro, and a hint of jalapeño for a bit of kick. Ingredients

  • 16 oz corn
  • 1 red bell pepper
  • 1 jalapeno pepper
  • ½ onion
  • ¼ cilantro
  • Spanglish Asadero Elote taste
  • Juice of one lime
  • ⅓ cup sour cream
  • ¼ cup queso fresco
  • Salt and pepper to taste

Directions
  1. Chop vegetables, jalapeño, bell peppers, onions, and cilantro.
  2. For the corn, it's optional, you can char it on the griddle to get some color. If you do, remove it from the griddle and let it cool.
  3. Once it’s cool, add corn to a bowl and the chopped vegetables.
  4. Add lime juice, salt and pepper taste, Spanglish Asadero Elote seasoning, sour cream, and give it a stir.
  5. Enjoy!
