Mexican Elote Salad is a crowd-pleaser that's perfect for any occasion. Made with fresh corn, onions, green onions, and jalapeño peppers, it’s a colorful dish bursting with flavor. Ingredients

  • 4 cups corn, cut from the cob. Should render about 5 cups. (canned corn or frozen corn are other options)
  • 1 tablespoon olive oil
  • ½ medium red bell pepper, chopped
  • ½ small red onion, chopped
  • ½ cup fresh cilantro, chopped
  • 4 green onions, chopped
  • 1 jalapeno pepper, diced
  • Juice of 2 limes
  • Spanglish Asadero Elote
  • Salt and pepper to taste
  • 2 tbsp sour cream (you can substitute with yogurt)
  • 2 tbsp mayonnaise
  • ½ cup cotija cheese, crumbled

Directions
  1. Prepare the corn if you have chosen on the cob. Feel free to use canned corn or frozen corn. If using frozen, there is no need to thaw it.
  2. In a large skillet, heat the olive oil over high heat.
  3. Add the corn and stir. Cook for about 3 to 5 minutes or until the corn starts to char. If using frozen corn, it will take longer to char, give or take another 2 minutes or so.
  4. Once the corn is done, place in a large bowl and allow to cool down for a couple of minutes.
  5. In the same bowl, add the remaining ingredients.
  6. Stir until thoroughly combined.
  7. Enjoy!
