Ingredients

  • 2 lbs beef (sirloin), cut into strips
  • Salt and pepper to taste
  • Spanglish Asadero Fajita Seasoning
  • ⅓ onion, sliced into thin strips
  • 2 poblano chiles, roasted, peeled, and cut into strips
  • ½ cup corn kernels
  • 1 garlic clove
  • Mozzarella cheese to taste
  • Oil as needed

Directions
  1. Heat the oil:
    Add a bit of oil to a skillet and heat over medium.
  2. Cook the beef:
    Add the beef and season with salt, pepper, garlic, and Spanglish Asadero Fajita Seasoning to taste. Mix well, cover, and cook for 12 minutes.
  3. Add the veggies:
    Add the sliced onion, mix, and then stir in the poblano peppers.
  4. Add the corn:
    Stir in the corn kernels, mix well, and cover. Cook for 3 minutes.
  5. Add the cheese:
    Finally, add the mozzarella cheese, cover just until melted, and it’s ready to serve!
