Ingredients
- 2 lbs beef (sirloin), cut into strips
- Salt and pepper to taste
- Spanglish Asadero Fajita Seasoning
- ⅓ onion, sliced into thin strips
- 2 poblano chiles, roasted, peeled, and cut into strips
- ½ cup corn kernels
- 1 garlic clove
- Mozzarella cheese to taste
- Oil as needed

Directions
- Heat the oil:
Add a bit of oil to a skillet and heat over medium.
- Cook the beef:
Add the beef and season with salt, pepper, garlic, and Spanglish Asadero Fajita Seasoning to taste. Mix well, cover, and cook for 12 minutes.
- Add the veggies:
Add the sliced onion, mix, and then stir in the poblano peppers.
- Add the corn:
Stir in the corn kernels, mix well, and cover. Cook for 3 minutes.
- Add the cheese:
Finally, add the mozzarella cheese, cover just until melted, and it’s ready to serve!
