Star Soup (Sopita de Estrellitas)

Ingredients

  • 3 tablespoon olive oil
  • 1/3 onion, chopped
  • Star pasta
  • 2 tomatoes
  • 1/3 of an onion
  • 1 garlic clove
  • 1 tablespoon chicken bouillon
  • 1 tablespoon tomato bouillon
  • 1 tablespoon Spanglish Asadero Garlic Salt seasoning
  • 4 cups of water, divided
  • Small cilantro bunch

Garlic Salt

Directions
  1. In a pan, add 3 tablespoons of olive oil.
  2. Add a little bit of chopped onion and sauté for about 1 minute.
  3. Next, add one 7 oz package of estrella pasta (little star pasta) and keep stirring constantly until the pasta changes color to a light golden brown.
  4. Meanwhile, in a blender add:
    • 2 tomatoes
    • 1/3 of an onion
    • 1 garlic clove
    • 1 tablespoon chicken bouillon
    • 1 tablespoon tomato bouillon
    • 1 tablespoon Spanglish Asadero Garlic Salt seasoning
    • 1 cup of water
  5. Blend everything until smooth.
  6. Pour the sauce over the toasted pasta and add 3 more cups of water. Add a small bunch of cilantro, cover, and let it cook for about 10–12 minutes.

Turn off the heat and it’s ready! Enjoy it with some crispy tacos of your choice.
