Charro beans are already full of flavor, but when you season them with our Spanglish Asadero Barbacoa Blend, they hit a whole new level. The smoky chipotle, garlic, citrus, and sea salt bring a deep, rich taste that slow-simmers right into every bite.These beans are more than a side dish. Serve them with rice, spoon them over tacos, or eat them straight out of the bowl. Ingredients

Beans & Base

  • 2 cups dried pinto beans (soaked overnight and rinsed)
  • 6 cups water or chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced

Meats

  • 6 oz chorizo
  • 4 oz smoked sausage, sliced
  • 4 slices bacon, diced
  • Vegetables & Peppers
  • 2 medium tomatoes, diced
  • 1 jalapeño pepper, diced (seeded if you prefer less heat)
  • 1 chipotle pepper in adobo sauce, chopped

Seasoning

  • 2 tbsp Spanglish Barbacoa Seasoning

Directions

Cook the Beans

  1. Add the soaked and rinsed pinto beans to a large pot with 6 cups of water or chicken broth. Add half of the diced onion and 2 cloves of minced garlic to the pot.
  2. Simmer on medium heat for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more liquid if needed to keep the beans submerged.

Prepare the Meat

  1. While beans are cooking, heat a large skillet over medium heat. Add diced bacon and cook until crispy. Remove and set aside.
  2. Using the same skillet, add the chorizo and cook until browned, breaking it into small pieces with a spoon.
  3. Add the sausage slices to the skillet and cook until lightly browned alongside the chorizo. Set the cooked meats aside.

Sauté Vegetables

  1. Using the same skillet with leftover fat from the meats, add the remaining diced onion and minced garlic. Sauté until fragrant and translucent, about 2-3 minutes.
  2. Add in the diced tomatoes, jalapeño, and chopped chipotle pepper. Cook for 4-5 minutes until softened.

Combine It All

  1. Once the beans are tender, add the cooked meats and sautéed vegetable mixture to the pot of beans.
  2. Sprinkle in the Spanglish Barbacoa Seasoning and stir well to combine.
  3. Simmer everything together, uncovered, for an additional 20-30 minutes.
  4. Serve and enjoy!
