Sopes de Carne Molida (Ground Beef Sopes)
Ingredients
- 2 lbs ground beef
 - Salt and pepper to taste
 - Spanglish Asadero All Purpose Seasoning
 - 1 garlic clove, finely chopped
 - ¼ white onion, finely chopped
 - 2 cups Maseca (corn flour)
 - 2 cups warm water
 - 1 pinch of salt
 - Oil for frying
 
For Serving:
- Refried beans
 - Chopped lettuce
 - Mexican crema
 - Crumbled queso fresco
 - Salsa to taste
 
Directions
- Cook the meat:
In a skillet with a little oil, add the ground beef. Season with salt, pepper, and Spanglish Asadero All Purpose Seasoning. Cook for 3 minutes, then add the garlic and onion. Mix, cover, and let cook for 8 minutes.
 - Prepare the dough:
In a bowl, mix the Maseca, pinch of salt, and warm water. Knead well for about 5 minutes until smooth and workable.
 - Form the sopes:
Take a portion of dough, shape it into a small tortilla, and cook it on a griddle for 1 minute on each side. Remove, and while still warm, pinch the edges with your fingers to form the sope shape.
 - Fry:
Heat oil in a skillet and fry the sopes until golden.
 - Serve:
Spread a layer of refried beans, add the ground beef, and top with lettuce, crema, queso fresco, and salsa to taste.
