Pollo al Chipotle (Chipotle Chicken)
Ingredients
- 3 chicken breasts, cut into small cubes
- Oil
- Salt and pepper to taste
- 1/3 of an onion, sliced into julienne strips
- 1/2 cup tomato puree
- 4 canned chipotle peppers
- 2 tbsps sour cream
- 1/2 block of cream cheese
- 2 tsps Spanglish Asadero Sweet Chipotle seasoning
- 1 clove of garlic
Directions
- Cut one chicken breast into cubes and fry it in a little oil with salt and pepper. Mix well so everything is evenly coated, then cover and cook for about 10 minutes.
- Next add 1/3 of an onion sliced into julienne strips. Mix, cover again, and cook until the chicken is nicely golden.
- While the chicken is cooking, add the following ingredients to a blender:
• tomato puree
• canned chipotle peppers
• sour cream
• cream cheese
• Spanglish Asadero Sweet Chipotle seasoning
• garlic
Blend until very smooth.
- Once the chicken is ready, pour in the sauce and mix well. When it starts to simmer, it’s ready to enjoy.
- Serve it with rice or other preferred side.
