Pineapple Chipotle BBQ Ribs
Ingredients
For the ribs:
- 1 whole rack of pork ribs
- Spanglish Asadero Pineapple Chipotle BBQ sauce
- Aluminum foil
For the sauce:
- 1 small can chipotle peppers in adobo
- 3 garlic cloves
- Juice of 2 oranges
- Salt and black pepper to taste
Directions
- Make the sauce:
In a blender, add the chipotle peppers (entire can), garlic cloves, orange juice, salt, and black pepper. Blend until smooth.
- Prep the ribs:
Remove the membrane (silver skin) from the back of the ribs using a paper towel for a better grip. Cut the rack in half if desired.
- Season:
Coat the ribs completely on both sides with the blended sauce.
- Bake:
Wrap the ribs tightly with aluminum foil and place them on a baking tray. Bake in a preheated oven at 350°F (175°C) for 1 to 1½ hours, until tender.
- Finish with BBQ:
Remove the ribs from the oven and carefully unwrap. Brush generously with Spanglish Asadero Pineapple Chipotle BBQ sauce.
- Final bake:
Return to the oven (uncovered) for 5–10 minutes until the sauce caramelizes.
