- 3 to 4 lbs beef, chuck roast or beef brisket are recommended
- 1 and 1/2 packets Spanglish Asadero Barbacoa seasoning, divided
- Oil
- 1/2 onion
- 2 bay leaves
- 3 cups water
For the sauce:
- 1 cup water, oregano, 5 cloves, 5 allspice, 1/2 tsp cumin, 3 garlic cloves, 2 tbs Spanglish Asadero Barbacoa
To assemble the quesadillas:

- mozzarella cheese, shredded
- cilantro, chopped
- onions, chopped
- salsa
