Barbacoa Quesadillas

Ingredients

  • 3 to 4 lbs beef, chuck roast or beef brisket are recommended
  • 1 and 1/2 packets Spanglish Asadero Barbacoa seasoning, divided
  • Oil
  • 1/2 onion
  • 2 bay leaves
  • 3 cups water

For the sauce:

  • 1 cup water, oregano, 5 cloves, 5 allspice, 1/2 tsp cumin, 3 garlic cloves, 2 tbs Spanglish Asadero Barbacoa


To assemble the quesadillas:

  • flour Tortillas
  • mozzarella cheese, shredded
  • cilantro, chopped
  • onions, chopped
  • salsa

Barbacoa

Directions
  1. Sear the meat in a skillet with a little oil and barbacoa seasoning.
  2. Blend: 1 cup water, oregano, 5 cloves, 5 allspice, ½ tbsp cumin, 3 garlic cloves, 2 tbsp barbacoa seasoning.
  3. Pour sauce over meat, add 3 cups water, onion, bay leaves. Cover and cook low for ~3 hrs until tender.
  4. Shred meat.
  5. Assemble quesadillas with tortilla + cheese + barbacoa, cook until crispy.
  6. Serve with cilantro, onion, and salsa.
