Ingredients

  • 2 cups corn, about 4 cobs
  • 1 Serrano pepper, chopped finely and deseeded if you prefer less heat
  • Spanglish Asadero Elote seasoning
  • 8 oz Oaxaca cheese, shredded
  • 8 oz Quesadilla cheese, shredded
  • 1 tbsp avocado oil
  • 1/2 cup yellow onion, diced
  • 1 tsp minced garlic
  • Salt to taste
  • Warm tortillas or tortilla chips for serving
  • Optional garnishes: pico de gallo, diced tomatos, chopped cilantro

Directions
  1. Prepare your grill. Char the corn.
  2. Heat a cast iron skillet or oven safe pan over medium heat with the avocado oil.
  3. Add the onions and the Serrano pepper and season with a pinch of salt. Sauté for 3 to 5 minutes until translucent.
  4. Add the garlic and sauté for 1 minute. (Make sure not to over cook the garlic as it will turn bitter) Let cool completely.
  5. While cooling, preheat your oven or grill to 350° F degrees.
  6. Add the cheeses, onion mixture, and corn to a bowl. Toss to combine.
  7. Add the mixture into a cast iron skillet or oven/grill safe dish.
  8. Bake for 10-12 minutes until melted, bubbly, and slightly golden brown.
  9. Serve warm with tortillas, tortilla chips, and your favorite toppings.
