Mexican Beef Picadillo

Ingredients

  • 2 teaspoons olive or avocado oil
  • 1 white onion, diced
  • 1 green bell pepper, diced
  • 2 small potatoes, peeled and diced
  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 2 tablespoons red wine
  • 1 8 oz can tomato sauce
  • 1½ cup beef broth
  • 3 teaspoons Spanglish Asadero All Purpose seasoning
  • Salt and pepper, to taste

Directions
  1. Heat a large skillet over medium heat and add the oil. Once warm, add the onion, potatoes, and peppers and cook for 5 minutes to soften.
  2. Add the garlic and add ground beef, cooking until the beef is mostly browned. Pour in the red wine and use it to deglaze the pan.
  3. Add the tomato sauce, beef broth and seasonings. Bring to a boil, then reduce to a simmer.
  4. Cover and cook for about 20 minutes, until the potatoes are fully soft. Add salt and pepper to taste.
  5. Serve over rice and enjoy.
