Jalapeño Queso Smash Burgers

Ingredients

🥓 Veggie, Bacon and Buns

  • 1 White onion, sliced
  • 2 Jalapeno peppers, sliced
  • 2 Serrano peppers, sliced
  • 4 strips Bacon
  • 2 tbsp Mayonnaise (for toasting the buns)

🧀 White Queso

  • 1/2 lb (8 oz) White American cheese, sliced, chopped, or shredded
  • 1/2 cup to 3/4 cup Whole milk
  • 1 1/2 tbsp Spanglish Asadero All-Purpose seasoning
  • 1/4 cup Fresh cilantro, finely chopped

🍔 Burgers

  • 2/3 lb 80/20 ground beef (divided into two 1/3 lb balls)
  • 2 slices Yellow or white American cheese
  • Spanglish Asadero All-Purpose seasoning (for the patties)

Directions
  1. Sauté the Veggies:
    Heat a griddle to medium-high heat. Add the white onion and cook until translucent and softened. Sauté the jalapeños and serranos until softened and slightly charred.
  2. Make the Queso:
    Combine the melted butter and milk in a small saucepan or skillet over low heat. After warming the milk, slowly begin adding the white American cheese. Stir until completely melted and smooth. Stir in the Spanglish Asadero seasoning and the fresh cilantro. Keep the saucepan on your stove’s lowest “warm” setting.
  3. Smash the Burgers:
    Crank the griddle to high heat. Place the two 1/3 lb beef balls onto the hot surface. Use a heavy press to smash them down completely flat. Season the top sides generously with the Spanglish Asadero seasoning.
  4. Flip and Melt:
    Cook for 2 minutes until the edges are darkly seared, then flip the patties. Immediately place one slice of American cheese on top of each patty so it can melt during the final 45 seconds of cooking. Remove patties from the heat.
  5. Toast the Buns:
    Spread a thin layer of mayonnaise on the cut sides of your burger buns. Place them face-down on the griddle for 1 to 2 minutes until golden brown and crispy, then set aside.
