Mexican Elote Dip is a must-have for any gathering. Made with fresh corn, it’s creamy and full of bold flavors. Our Spanglish Asadero Elote seasoning brings out the best in this dip, with its chipotle, lime spices, and parmesan cheese blend. Ingredients

  • 16 frozen corn kernels
  • 1 small, diced onion
  • 2 diced garlic cloves
  • 1 diced jalapeno, (seeds or seedless up to you)
  • 1 block of cream cheese
  • ½ cup chopped cilantro
  • 3 tbsp mayo
  • 1-2 oz of lime juice
  • ¼ cup Parmesan cheese
  • ¾ cups of mozzarella cheese
  • 2 tbsp hot sauce
  • ½ tsp garlic powder, onion powder, and salt to taste.
  • 1 tbsp Spanglish Asadero Mexican BBQ
  • Cotija or queso fresco for garnish
  • Chopped cilantro for garnish
  • Tortilla chips for serving

Elote
Directions
  1. Prep all vegetables and set aside.
  2. In a skillet, cook the diced garlic, onions, and jalapeños for a few minutes.
  3. Add in the corn. Once the corn starts to get some color, season with some salt, pepper, garlic, and Spanglish Asadero Elote seasoning.
  4. Stir well and add the cream cheese, mayo, parmesan cheese, and any other cheese of your choice.
  5. Next, add cilantro to taste and the lime juice.
  6. Once everything is mixed well and melted, garnish with cilantro and crumbled queso fresco and serve with tortilla chips.
