Creamy Mashed Potatoes

Ingredients

  • 8 potatoes, peeled and cut in half
  • 2 cups of water
  • ½ stick of unsalted butter
  • 2 garlic cloves, crushed
  • 1/3 cup sour cream
  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon parsley
  • 1/2 tablespoon Spanglish Asadero All-Purpose seasoning
  • 2 tablespoons Parmesan cheese
  • Salt to taste
  • Optional: extra butter and finely chopped chives for serving

Directions
  1. Place the peeled potatoes (cut in half) in a pot with 2 cups of water. Boil until the potatoes are fully cooked and tender.
  2. While the potatoes cook, heat a pan over medium heat. Add the unsalted butter and the crushed garlic. Cook for about 30 seconds.
  3. Add the sour cream, heavy whipping cream, parsley, Spanglish Asadero All-Purpose seasoning, Parmesan cheese, and salt to taste. Mix well until everything is fully combined. Bring to a gentle boil, then turn off the heat.
  4. Once the potatoes are done, drain the water and mash them thoroughly.
  5. Pour the creamy mixture over the mashed potatoes and mix until everything is well incorporated.
  6. Serve warm, topped with a little butter and finely chopped chives if desired.
