Ingredients
- 8 potatoes, peeled and cut in half
- 2 cups of water
- ½ stick of unsalted butter
- 2 garlic cloves, crushed
- 1/3 cup sour cream
- 1/2 cup heavy whipping cream
- 1/2 teaspoon parsley
- 1/2 tablespoon Spanglish Asadero All-Purpose seasoning
- 2 tablespoons Parmesan cheese
- Salt to taste
- Optional: extra butter and finely chopped chives for serving
Directions
- Place the peeled potatoes (cut in half) in a pot with 2 cups of water. Boil until the potatoes are fully cooked and tender.
- While the potatoes cook, heat a pan over medium heat. Add the unsalted butter and the crushed garlic. Cook for about 30 seconds.
- Add the sour cream, heavy whipping cream, parsley, Spanglish Asadero All-Purpose seasoning, Parmesan cheese, and salt to taste. Mix well until everything is fully combined. Bring to a gentle boil, then turn off the heat.
- Once the potatoes are done, drain the water and mash them thoroughly.
- Pour the creamy mixture over the mashed potatoes and mix until everything is well incorporated.
- Serve warm, topped with a little butter and finely chopped chives if desired.
