Sweet Chipotle Pineapple Wings
Ingredients
🍗 Wings & Marinade
- 2–3 lbs chicken wings
- 2–3 tbsp Spanglish Asadero Sweet Chipotle seasoning
- ½ fresh pineapple (grilled)
- Juice of 3 oranges
- Juice of 2 limes
- 2 chipotle peppers in adobo sauce
- 1–2 tbsp achiote paste
- ¼ cup brown sugar
- 4–5 garlic cloves
- 2 tbsp neutral oil
🍯 Sweet Chipotle Sauce
- 1 cup reserved marinade
- ⅓ cup brown sugar
- 3 tbsp honey
- ¼ cup pineapple juice
- Juice of 1 lime
- 1 tbsp butter
🌿 Garnish
- Grilled pineapple rings
- Cilantro
- Cotija
- Lime wedges
Directions
- Grill pineapple rings until caramelized. Use half for marinade and reserve half for plating.
- Blend grilled pineapple (for marinade) with orange juice, lime juice, chipotle peppers in adobo, achiote, garlic, brown sugar, oil, and seasoning.
- Reserve 1 cup marinade for sauce. Marinate wings 4+ hours (overnight best).
- Smoke at 275°F for 45–60 min until ~165°F internal.
- While wings smoke, boil reserved marinade. Add brown sugar, honey, pineapple juice, lime juice, and butter. Simmer until thick.
- Fry wings at 350°F for 2-3 min until crispy.
- Toss in sauce and plate with grilled pineapple, cilantro, cotija, and lime.
