Sweet Chipotle Pineapple Wings

Ingredients

🍗 Wings & Marinade

  • 2–3 lbs chicken wings
  • 2–3 tbsp Spanglish Asadero Sweet Chipotle seasoning
  • ½ fresh pineapple (grilled)
  • Juice of 3 oranges
  • Juice of 2 limes
  • 2 chipotle peppers in adobo sauce
  • 1–2 tbsp achiote paste
  • ¼ cup brown sugar
  • 4–5 garlic cloves
  • 2 tbsp neutral oil

🍯 Sweet Chipotle Sauce

  • 1 cup reserved marinade
  • ⅓ cup brown sugar
  • 3 tbsp honey
  • ¼ cup pineapple juice
  • Juice of 1 lime
  • 1 tbsp butter

🌿 Garnish

  • Grilled pineapple rings
  • Cilantro
  • Cotija
  • Lime wedges

Sweet Chipotle

Directions
  1. Grill pineapple rings until caramelized. Use half for marinade and reserve half for plating.
  2. Blend grilled pineapple (for marinade) with orange juice, lime juice, chipotle peppers in adobo, achiote, garlic, brown sugar, oil, and seasoning.
  3. Reserve 1 cup marinade for sauce. Marinate wings 4+ hours (overnight best).
  4. Smoke at 275°F for 45–60 min until ~165°F internal.
  5. While wings smoke, boil reserved marinade. Add brown sugar, honey, pineapple juice, lime juice, and butter. Simmer until thick.
  6. Fry wings at 350°F for 2-3 min until crispy.
  7. Toss in sauce and plate with grilled pineapple, cilantro, cotija, and lime.
