Bistec Ranchero Con Papas (Ranchero Steak with Potatoes)

Ingredients

For the Sauce:

  • 2 pounds beef steak
  • Salt, pepper, and garlic powder to taste
  • Spanglish Asadero All Purpose Seasoning, to taste
  • ⅓ white onion, sliced into strips
  • 2 jalapeño peppers, sliced
  • 2 potatoes, peeled and cubed
  • Vegetable oil, as needed
  • Fresh cilantro, chopped (to taste)

For the Steak:

  • 2 tomatoes
  • 1 piece of onion
  • 1 garlic clove
  • 1 teaspoon salt
  • 1 teaspoon chicken bouillon powder
  • 1 teaspoon tomato powder
  • ½ teaspoon ground cumin
  • 1 cup water

Directions

Make the sauce

In a blender, combine the tomatoes, onion, garlic, salt, chicken bouillon, tomato powder, cumin, and water. Blend until smooth and set aside.


Cook the steak

  1. In a large skillet, add a little oil and place the steak inside.
  2. Season with salt, pepper, garlic powder, and Spanglish Asadero All Purpose Seasoning.
  3. Stir, cover, and cook over medium heat for 10 minutes.

Add vegetables

  1. Add the sliced onion, jalapeños, and potatoes.
  2. Stir, cover, and cook for another 15 minutes or until the potatoes are tender.

Add the sauce

  1. Pour the sauce over the steak and vegetables.
  2. Stir, add fresh cilantro, cover, and cook for 5 more minutes.

Serve

  • Serve hot with rice, beans, or tortillas.
