Al Pastor
Directions

Marinate the Pork

  1. In a large bowl, mix together the Spanglish Asadero Al Pastor seasoning, white vinegar, pineapple juice, orange juice, and olive oil.
  2. Add thinly sliced pork to the marinade, ensuring the pork is well-coated.
  3. Cover the bowl and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

Grill the Pork

  1. Remove the pork from the marinade and grill until cooked through, about 5-7 minutes per side.
  2. If using a grill pan, cook in batches to avoid overcrowding.

Grill the Pineapple

  1. Place the finely chopped pineapple on the grill and cook until slightly charred, about 2-3 minutes.

Assemble the Tacos

  1. Warm the tortillas
  2. Once the pork is cooked, thinly slice it against the grain.
  3. Place a few slices of grilled pork on each warm tortilla.
  4. Top with grilled pineapple, chopped onion, and cilantro.
  5. Squeeze fresh lime juice over the top and season with salt and pepper to taste.
  6. Serve immediately with extra lime wedges on the side and enjoy!
