Corn Ribs bring out the best in grilled corn. Ingredients

  • Spanglish Asadero Elote to taste
  • ¼ cilantro bunch, chopped
  • 2 garlic cloves, minced
  • 5 tbsp olive oil

If making the Mayo-Lime Mixture

  • 2 tbsp mayo
  • 2 oz of lime juice
  • Cilantro and parmesan cheese for garnish

Directions
  1. Get a sharp knife, one that can cut through corn on the cob. Cut into four slices, lengthwise.
  2. Toss them into the seasoning mixture ensuring they are all evenly coated.
  3. Place them in indirect heat at around 350° and grill for 30 min.
  4. After they are done you can enjoy them as is.
  5. Or you can go a step further and toss them into a mayo-lime mixture.

Mayo-Lime Mixture

  1. 2 tbsp mayo
  2. 2 oz of lime juice
  3. Mix well and toss into the mixture.
  4. Garnish the corn ribs with cilantro and parmesan cheese.
