Crispy Cheesy Beef Taquitos

Ingredients

For the beef:

  • 1 ½ lbs ground beef
  • 1/3 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 4 tablespoons Spanglish Asadero Ranchero Steak seasoning
  • A little oil (for sautéing)

For the avocado sauce:

  • 1/2 avocado
  • A small handful of cilantro
  • 1 garlic clove
  • Salt to taste
  • Juice of 1/2 lemon
  • 1 tbs of olive oil
  • 2 tablespoons crema (or sour cream)

For assembling:

  • Flour tortillas
  • Mozzarella cheese
  • Oil (for frying)

Directions

Cook the beef:
Heat a pan over medium heat and add a small amount of oil.
Sauté the chopped onion and garlic for a few seconds until fragrant.
Add the ground beef and mix well. Season with the Ranchero Steak seasoning.
Stir until everything is evenly combined.
Cover and cook on medium-low heat for about 25 minutes, stirring occasionally.

Prepare the avocado sauce:
In a blender, combine the avocado, cilantro, garlic, salt, lemon juice, and crema.
Blend until smooth and creamy. Set aside.

Assemble the taquitos:
Fill each flour tortilla with the cooked beef and shredded mozzarella cheese.
Roll them tightly.

Fry the taquitos:
Heat oil in a pan over medium heat.
Fry the taquitos until golden and crispy on both sides.

Remove and place on paper towels to absorb excess oil.

Serve and enjoy with the avocado sauce.
