Camarones con Calabacitas (Shrimp with Zucchini)
Ingredients
- 2 lb (900 g) shrimp, cleaned and peeled
- 1/4 onion, chopped (divided into 2 parts)
- 1 garlic clove, finely chopped
- 1/2 Tbsp butter
- Oil, as needed
- 1 tomato, chopped
- 1 jalapeño, chopped
- 1 large zucchini (or 2 small), diced
- Mozzarella cheese, to taste (shredded or in pieces)
- Salt and pepper, to taste
- Paprika, to taste

Directions
- Saute shrimp
- Heat a little oil and 1/2 Tbsp butter in a large skillet.
- Add half the chopped onion and the garlic; sauté for 30 seconds.
- Add the shrimp and season with salt, pepper, paprika, and All Purpose seasoning.
- Cook for about 3 minutes, until the shrimp change color. Remove from skillet and set aside.
- Cook the Vegetables
- In the same skillet, add a little more oil.
- Add the remaining onion, tomato, and jalapeño; sauté for 2 minutes.
- Stir in the zucchini, cover, and cook for 2 minutes until softened.
- Combine and Melt
- Return the shrimp to the skillet and mix everything together.
- Add mozzarella cheese to taste, cover, and let it melt for 1–2 minutes.
- Serve
- Enjoy hot with corn tortillas or white rice.
