Camarones con Calabacitas (Shrimp with Zucchini)

Ingredients

  • 2 lb (900 g) shrimp, cleaned and peeled
  • 1/4 onion, chopped (divided into 2 parts)
  • 1 garlic clove, finely chopped
  • 1/2 Tbsp butter
  • Oil, as needed
  • 1 tomato, chopped
  • 1 jalapeño, chopped
  • 1 large zucchini (or 2 small), diced
  • Mozzarella cheese, to taste (shredded or in pieces)
  • Salt and pepper, to taste
  • Paprika, to taste

Directions
  1. Saute shrimp
    • Heat a little oil and 1/2 Tbsp butter in a large skillet.
    • Add half the chopped onion and the garlic; sauté for 30 seconds.
    • Add the shrimp and season with salt, pepper, paprika, and All Purpose seasoning.
    • Cook for about 3 minutes, until the shrimp change color. Remove from skillet and set aside.
  2. Cook the Vegetables
    • In the same skillet, add a little more oil.
    • Add the remaining onion, tomato, and jalapeño; sauté for 2 minutes.
    • Stir in the zucchini, cover, and cook for 2 minutes until softened.
  3. Combine and Melt
    • Return the shrimp to the skillet and mix everything together.
    • Add mozzarella cheese to taste, cover, and let it melt for 1–2 minutes.
  4. Serve
    • Enjoy hot with corn tortillas or white rice.
