Instructions
Cook the steak: Heat the oil in a large skillet over medium heat. Add the finely chopped onion and garlic and sauté for about 30 seconds.
Add the meat: Add the beef steak to the skillet and season with the Spanglish Asadero Carne Asada seasoning and pepper. Mix well so the meat is evenly coated.
Cook: Cover the skillet and cook over medium-low heat for about 20 minutes, or until the meat is fully cooked and the juices have reduced.
Prepare the pico de gallo: In a bowl, combine the diced tomato, chopped onion, serrano pepper, cilantro, lime juice, salt, and pepper. Mix well and adjust seasoning to taste.
Prepare the guacamole: Mash the avocado in a bowl and mix with a little lime juice, salt, and pepper.
Assemble the quesadillas: Place the flour tortillas on a hot griddle or skillet. Add shredded mozzarella cheese and some of the cooked steak. Fold the tortilla and cook until the cheese melts.
Serve: Top the quesadillas with guacamole, pico de gallo, and your favorite salsa. Enjoy!
