Ingredients
3 large potatoes, washed and dried
1 lb ground beef
Salt, to taste
Black pepper, to taste
Paprika, to taste
½ white onion, finely chopped
5–6 mushrooms, finely chopped
1 tomato, finely chopped
⅓ Cup milk or heavy cream
1 Cup shredded mozzarella cheese
Oil, as needed
Instructions
Wash the potatoes thoroughly and pat dry. Rub each potato with a little oil and sprinkle with salt, coating evenly. Wrap each potato in aluminum foil.
Place the wrapped potatoes in an air fryer or oven and cook at 400°F for approximately 1 hour, or until very soft and tender.
While the potatoes cook, heat a skillet over medium heat. Add the ground beef and season with salt, black pepper, paprika, and Spanglish Asadero Golden seasoning. Mix well, cover, and cook for about 10 minutes.
Add the chopped onion, mushrooms, and tomato. Mix together, cover, and cook for another 10 minutes, or until the beef is fully cooked and the vegetables are tender.
Once the potatoes are tender, carefully remove them from the foil. Cut lengthwise across the middle of each potato, being careful not to cut all the way through. Scoop out the potato flesh and place in a bowl.
Season the potato flesh with a little Spanglish Asadero Golden Garlic seasoning. Add the milk or heavy cream and about 1 cup of shredded mozzarella cheese. Mix well until creamy and combined.
Add some of the cheesy potato mixture back into each potato. Top with the seasoned ground beef, then add another layer of the potato mixture.
Sprinkle additional shredded mozzarella cheese on top.
Return the stuffed potatoes to the oven and bake for approximately 8 minutes, or until the cheese is melted and the tops are golden brown.
