Ingredients
Veggie, Bacon & Buns:
1 white onion, sliced
2 jalapeno peppers, sliced
2 serrano peppers, sliced
4 strips Bacon
2 Tbsp mayonnaise
White Queso:
½ lb (8 oz) white American cheese, sliced, chopped, or shredded
½ Cup to ¾ Cup whole milk
¼ Cup cilantro, finely chopped
Burgers:
⅔ lb 80/20 ground beef (divided into two 1/3 lb balls)
2 slices yellow or white American cheese
Spanglish Asadero All Purpose Seasoning (for the patties)
Instructions
Sauté the veggies: Heat a griddle to medium-high heat. Add the white onion and cook until translucent and softened. Sauté the jalapeños and serranos until softened and slightly charred.
Make the queso: Combine the melted butter and milk in a small saucepan or skillet over low heat. After warming the milk, slowly begin adding the white American cheese, stirring until completely melted and smooth. Stir in the Spanglish Asadero All-Purpose seasoning and fresh cilantro. Keep the saucepan on the stove's lowest "warm" setting.
Smash the burgers: Crank the griddle to high heat. Place the two ⅓ lb beef balls onto the hot surface and use a heavy press to smash them down completely flat. Season the top sides generously with Spanglish Asadero All Purpose seasoning.
Flip and melt: Cook for 2 minutes until the edges are darkly seared, then flip the patties. Immediately place a slice of American cheese on top of each patty so it can melt during the final 45 seconds of cooking. Remove from the heat.
Toast the buns: Spread a thin layer of mayonnaise on the cut sides of the burger buns. Place face-down on the griddle for 1–2 minutes, until golden brown and crispy, then set aside.
Assemble the stack: Build the burger on the bottom bun in this order: bottom bun, first burger patty with melted American cheese, bacon, sautéed onions, second burger patty with melted American cheese, sautéed onion, bacon, sautéed serrano and jalapeño peppers, a generous pour of the warm white queso, and the top bun.
