Huevos Divorciados (Divorced Eggs)

Huevos divorciados (divorced eggs)

Huevos Divorciados is a dish that tells a story on the plate. Two fried eggs sit side by side, each covered in a different sauce — one red, one green — separated by warm tortillas, beans, or potatoes. The name means "divorced eggs," but the combination is anything but divided. The flavors come together in every bite, blending smoky, tangy, and rich notes with the heat and depth of the sauces.

Our Spanglish Asadero Mexican BBQ Seasoning takes this dish to another level. With a blend of smoky chipotle, spices, and a hint of lime, it adds depth to the eggs, enhances the beans, and brings balance to the salsa, tying everything together with a bold, familiar flavor that's been passed down through generations.

Huevos Divorciados isn't just a breakfast dish — it's a tradition. Whether served at a weekend table with family or as a comforting meal at any time of day, it's a reminder that great flavors don't have to choose sides.

Ingredients

  • 4 large eggs

  • 2 Tbsp unsalted butter

  • 2 tsp Spanglish Asadero Mexican BBQ Seasoning

  • 4 small tortillas

  • 1 Cup refried beans, warmed

  • ⅔ Cup Salsa Roja

  • ⅔ Cup Salsa Verde

  • ¼ Cup Cotija cheese, crumbled

  • ¼ Cup red onion, sliced thinly

  • ¼ Cup cilantro, finely chopped

Instructions

  1. Heat the butter in a frying pan over medium heat. Once melted, crack the eggs into the pan and season the tops with Spanglish Asadero Mexican BBQ seasoning. Cook until desired doneness, then remove and set aside.

  2. In the same frying pan, warm the tortillas for 1 minute on each side.

  3. Place the tortillas on a plate and add a heaping scoop of refried beans down the middle, as a barrier to help separate the salsas.

  4. Place the seasoned eggs on top of each tortilla, surrounding each egg with salsa roja on one side and salsa verde on the other.

  5. Sprinkle with crumbled Cotija cheese, red onion slivers, and chopped cilantro.
