Ingredients

  • 5 corn cobs, husked and cut into 3rds

  • ⅓ Cup mayonnaise

  • ¼ Cup sour cream

  • 1 lime, juiced

  • 2 tsp Spanglish Asedero Elote Seasoning

  • ⅓ Cup Cotija cheese, finely grated

  • ¼ Cup cilantro, finely chopped

Instructions

  1. Fire up the grill, setting up a direct medium-heat area (350°F–400°F) and an indirect heat area.

  2. Pierce a skewer into the bottom of each corn cob. Note: If using wooden skewers, soak them for 20–30 minutes before using.

  3. Place the corn directly over the heated area, cover, and cook for 15 minutes, rotating often for an even char.

  4. Move to the indirect heat area, close the grill, and cook for an additional 5 minutes.

  5. While the corn finishes on the grill, combine the mayonnaise, sour cream, lime juice, and 1 tsp Spanglish Asadero Elote seasoning to make the creamy spread.

  6. Remove the corn from the grill and coat evenly with the creamy spread. Sprinkle each cob with Cotija cheese, the remaining 1 tsp Spanglish Asadero Elote seasoning, and cilantro.

  7. Serve immediately and enjoy!
