Ingredients

  • 1½ lb chorizo

  • 2 medium potatoes, diced

  • 2 nopales (cactus), cooked with a little water and salt

  • 3 tomatoes

  • 2 jalapeño peppers

  • 1 small piece of onion

  • 1 garlic clove

  • 1 handful of fresh cilantro

  • Salt and pepper to taste

  • Spanglish Asadero All Purpose Seasoning

  • Oil

Instructions

  1. Prepare the sauce: Roast the tomatoes, jalapeños, onion, and garlic until charred. Blend with a little water, salt to taste, and the cilantro for about 6 seconds, so the sauce stays chunky. Set aside.

  2. Cook the potatoes: In a skillet, heat a little oil. Add the diced potatoes and season with salt, pepper, and Spanglish Asadero All Purpose seasoning. Cook over medium heat until tender. Set aside.

  3. Cook the chorizo: In another skillet, cook the chorizo over medium heat for about 15 minutes, until nicely browned.

  4. Combine everything: Add the cooked potatoes to the skillet with the chorizo, then add the cooked nopales and the roasted sauce. Mix well, cover, and let simmer for a few minutes so the flavors blend together.

  5. Serve: Once the mixture begins to boil, turn off the heat and enjoy!
