Ingredients

  • 2 lb shrimp, cleaned and peeled

  • ¼ onion, chopped (divided into 2 parts)

  • 1 garlic clove, finely chopped

  • ½ Tbsp butter

  • Oil, as needed

  • 1 tomato, chopped

  • 1 jalapeño, chopped

  • 1 large zucchini (or 2 small), diced

  • Mozzarella cheese, to taste (shredded or in pieces)

  • Salt and pepper

  • Paprika

  • Spanglish Asadero All Purpose Seasoning

Instructions

  1. Sauté the aromatics: Heat a little oil in a large skillet over medium heat. Add half of the chopped onion and the garlic and sauté for 1–2 minutes until fragrant.

  2. Add the tomato and jalapeño: Stir in the chopped tomato and jalapeño and cook for 3–4 minutes until softened.

  3. Add the zucchini: Stir in the diced zucchini and remaining chopped onion. Season with salt, pepper, paprika, and Spanglish Asadero All Purpose seasoning. Cook for 5–6 minutes, stirring occasionally, until the zucchini is tender.

  4. Cook the shrimp: Push the vegetables to one side of the skillet, add the butter, and place the shrimp in the pan. Season the shrimp with a little more salt, pepper, and Spanglish Asadero All Purpose seasoning. Cook for 2–3 minutes per side, until the shrimp turn pink and are cooked through.

  5. Combine: Toss the shrimp together with the vegetables so everything is well coated in the seasoning and juices.

  6. Add the cheese: Sprinkle the mozzarella cheese over the top, cover, and cook for 1–2 minutes, until melted.

  7. Serve: Serve warm on its own, or with tortillas or rice.
