Al Pastor Burger

Al pastor burger on wood table

If you love the smoky-sweet flavor of al pastor tacos, this Al Pastor Burger brings that same bold flavor to your backyard flat top. A juicy blend of ground pork and beef is seasoned with our Spanglish Asadero Al Pastor Seasoning, smashed to a crispy, caramelized crust, then piled high with melty pepperjack cheese, charred pineapple, creamy guacamole, and tangy pickled red onions — all sandwiched between a toasted, buttery brioche bun.

This isn't your average burger night. It's a Mexican-inspired mashup that hits every note: smoky, sweet, savory, and just a little spicy. Whether you're firing up the griddle for a weeknight dinner or hosting a backyard cookout, this Al Pastor Burger is guaranteed to be the star of the spread.

Ingredients

Burger Patties:

Burger Toppings:

  • 4 pepperjack cheese slices

  • 4 pineapple slices

  • ½ Cup guacamole

  • ¼ Cup mayonnaise or aioli

  • 4 butter lettuce leaves

  • 8 Tbsp pickled red onions

Burger Buns:

  • 4 brioche burger buns

  • 1 Tbsp butter or cooking spray

Instructions

  1. Mix pork, beef, onion, garlic, and cilantro in a bowl. Form into 4 loose meatballs and place in the refrigerator for at least 10 minutes. Note: Chilling the meat prior to cooking will help produce a better crust on the patties.

  2. Preheat the flat top to medium-high heat (400°F).

  3. Place pineapple slices on the flat top and cook for 1-2 minutes per side until caramelized. Set aside.

  4. Place meatballs on the hot flat top. Smash to ¼ inch thick with a spatula, pressing down firmly. Note: Use parchment paper between the spatula and meatball to prevent sticking.

  5. Sprinkle each patty with ¼ Tbsp Spanglish Asadero Al Pastor seasoning.

  6. Cook 2-3 minutes until a crust forms. Flip, season the other side, and top each with a cheese slice. Cook an additional 1-2 minutes, until the cheese melts and the internal temperature reaches your desired doneness.

  7. Coat burger buns with a little butter or cooking spray and toast on the flat top for about 30 seconds, until golden brown.

  8. Assemble your burgers with mayonnaise or aioli on the bottom bun, then layer the lettuce, pineapple slice, cheesy burger patty, 2 Tbsp guacamole, and pickled onions, then the top bun. Serve immediately and enjoy!
