Taco Casserole

  • 3/4 cup sour cream
  • 3 tsp. Spanglish Asadero Taco seasoning
  • 1 lb. ground beef
  • 1 small yellow onion, diced
  • 3/4 cup water
  • 16 oz. refried beans
  • 2 cups cheddar cheese, shredded
  • 1/4 cup black olives, sliced
  • 3/4 cup crunchy toppings (like tortilla chips or Fritos)
  • 1/3 cup green onions, chopped
  • 1/3 cup tomatoes, diced
  • 1/3 cup lettuce, shredded

Ingredients

  1. Let sour cream come to room temperature.
  2. Preheat the oven to 350℉ degrees.
  3. Add ground beef and yellow onion to a large pan. Cook and crumble over medium heat until meat is cooked through. Drain excess grease.
  4. Add water and Spanglish Asadero Taco seasoning to the pan. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally. Remove from heat and let cool for 8-10 minutes.
  5. Spread refried beans in an even layer in a lightly greased 9x13-inch casserole dish.
  6. Spread sour cream over refried beans, followed by the slightly cooled ground beef mixture, then cheddar cheese.
  7. If preparing ahead, let cool, cover, and refrigerate until ready to bake. If baking immediately, bake uncovered for 15 minutes or until cheddar cheese is hot and melted. If baking from refrigerated, bake covered for 25 minutes, then uncover and bake for an additional 5 minutes.
  8. Top with black olives and crunchy toppings.
  9. Bake uncovered for 8 minutes.
  10. Serve over a bed of shredded lettuce, garnish with green onions and tomatoes. Enjoy!
