Quesadillas de Bistec (Steak Quesadillas)
Ingredients
For the steak:
- 2 pounds beef steak (sirloin), cut into pieces
- 1/3 onion, finely chopped
- 3 garlic cloves, finely chopped
- 3 tablespoons Spanglish Asadero Carne Asada seasoning
- 1 tablespoon oil
- black pepper
For the pico de gallo:
- 1 tomato, diced
- 2 tablespoons chopped onion
- 1 serrano pepper, finely chopped
- 2 tablespoons chopped cilantro
- Lime juice, to taste
- Salt and pepper, to taste
For the guacamole:
- 1 avocado
- A little lime juice
- Salt and pepper, to taste
For the quesadillas:
- Flour tortillas
- Shredded mozzarella cheese
- Salsa of your choice
Directions
- Cook the steak:
Heat the oil in a large skillet over medium heat. Add the finely chopped onion and garlic and sauté for about 30 seconds.
- Add the meat:
Add the beef steak to the skillet and season with the Spanglish Asadero Carne Asada seasoning and pepper. Mix well so the meat is evenly coated.
- Cook:
Cover the skillet and cook over medium-low heat for about 20 minutes, or until the meat is fully cooked and the juices have reduced.
- Prepare the pico de gallo:
In a bowl, combine the diced tomato, chopped onion, serrano pepper, cilantro, lime juice, salt, and pepper. Mix well and adjust seasoning to taste.
- Prepare the guacamole:
Mash the avocado in a bowl and mix with a little lime juice, salt, and pepper.
- Assemble the quesadillas:
Place the flour tortillas on a hot griddle or skillet. Add shredded mozzarella cheese and some of the cooked steak. Fold the tortilla and cook until the cheese melts.
- Serve:
Top the quesadillas with guacamole, pico de gallo, and your favorite salsa. Enjoy!
